I recently hosted a baby play date for the new mums in my area. I was so excited and wanted to make something Aussie for the ladies to eat. What’s more Aussie then a delicious Pavlova?  So as I started to make the meringue mixture, for some reason it just wouldn’t whip to stiff peaks, at first i blamed the egg for not being room temperature, or humidity in the air and then I blamed the sugar ( i used normal sugar instead of caster sugar) , I tried it again the 2nd time with icing sugar and it still failed.

10 eggs later…

I gave up.. feeling down, I no longer wanted to waste any more ingredients. As you can see in my pictures, my meringue mixture separated with the egg white liquid sitting at the bottom of the bowl, then I tried to use the only stiff bits and placed it in the oven. I baked for nearly an hour, and nothing happened, the pavlova was gooey and was just not crisping on the outside. At this point i  totally gave up , a tad embarrassed and didn’t end up serving the ladies anything at all. Looking at my failed mixture of 10 eggs… I felt it was such a waste of money and I didn’t just want to wash it down the drain.

So I decided I needed to fix it and I need to make something out of it instead of throwing away so many eggs!

So i whipped together whatever I found in the pantry, flour, butter, blueberries, sugar, and made this yummy blueberry meringue slice! Turned out looking more beautiful then expected and even yummier too!

So give it a go and don’t feel down if you failed your pavlova or macaron or anything with a meringue mix!  It is more common then you think!



Blueberry Meringue Slice

Did you fail to make a meringue or pavlova and now you have so much leftover mix and don't know what to do with it? Don't waste it! Instead go through your pantry to find some ingredients and whip this recipe up and you won't regret it!

  1. 220g flour
  2. 20g custard powder
  3. 60g sugar
  4. 110g butter, melted
To top
  1. 1 punnet of blueberries
  2. 1 tsp sugar
  3. Failed Meringue Mix or
  4. 2 egg whites
  5. 100g castor sugar
  1. Preheat the oven to 180 degrees Celsius
  2. Line a 20cm by 20cm slice tin with baking paper
  3. In a large bowl, mix together all the base ingredients, the flour, custard powder, sugar and butter until combined.
  4. Press evenly and firmly into the slice tin.
  5. To make the Jam - Heat a non stick pan and place the blueberries in it then add the tsp of sugar, cook gently for 5 min until the blueberries soften and create a nice blue Jam consistency.
  6. Spread this over the flour mixture.
  7. Now spread the failed meringue mixture on top and place it in the oven. Or you can make this mixture by whipping egg whites until bubbly, then add the sugar bit by bit, beating until glossy. Bake for about 25 minutes, until the meringue is crispy and lightly golden. Cool in the tin, then cut and serve.
